you will need:
| for dressing: |
1/3 cup tarragon vinegar |
1/2 cup olive oil |
1 Tablespoon dijon mustard |
pinch of sugar |
pinch of dried tarragon leaves |
 
salt & pepper to season |
| for salad: |
1 cup arugula (optional) |
1 head of romaine lettuce |
cherry tomatoes |

directions:
(get an adult to be your assistant)
Mix all dressing ingredients together well. Toss over fresh greens such as romaine lettuce or arugula and top with cherry tomatoes.
Goes great with the quiche. Even your Dad will like it!
Serves 3-4 people.
