WINTER FUN FOR GREENIES

Hey Greenies, does anyone have the winter blues yet? You know, where you’re really starting to miss the sun-on-your-face, warm days of summer? Well I have a cool quick remedy for you!

Did you know that eating healthy foods like fruits, vegetables and whole grains could help you feel better, have more energy and start to melt away those winter blues?? Here is a great, easy recipe for a home made salad that will have your mouth watering and your spirits lifted!

You may want to ask mom or dad for some help before making this salad, as you will have to use a knife to cut the celery, nuts and oranges.

Ingredients:

  • 1 bag of organic salad greens. (I prefer arugula but you can use baby spinach, mixed greens or baby romaine)
  • 3 stick of organic celery
  • 1 handful of brazil nuts (or almonds, cashews, walnuts)
  • 2 small organic oranges (or 3 clementines)
  • 1 handful of organic dried cranberries
  • 1/3 cup of balsamic vinegrette dressing
  • 1 teaspoon organic honey

Get Started:

Use a colander to rinse salad greens in cool water. Shake the colander to dry them off. Place salad greens in big salad bowl.

Carefully cut the celery sticks to the desired size and add to salad bowl.

Carefully chop the brazil nuts into small pieces and add to salad bowl.

Peel your oranges and divide them up into their natural sections. Cut each orange section into bite-sized pieces and add to salad bowl.

Take your dried cranberries and add to salad bowl.

Measure ¼ cup of balsamic vinegrette salad dressing. Add 1 teaspoon of honey to the dressing and mix thoroughly. The honey will want to stick to the container and to the spoon but keep mixing until it is absorbed into the dressing!

Now, add your dressing to the salad and viola! You’re finished! Now you have a great healthy meal to eat alone or share with your family and friends that helps everyone shake off those winter blues.
