SUMMER TREATS

Summer’s here—let the barbeques begin! With all the
great picnics and backyard get-togethers to go to,
you’ll want to have all your favorite tasty desserts
to bring. Enjoy these sunny sweet recipes with
friends and family and they’ll be begging for more!
Luscious
Lemon Cupcakes
This is an easy recipe because it's half homemade
and half store bought. Either way, the taste is the
best of both worlds.
Ingredients:
1 box of lemon cake mix
Lemon Cream Frosting:
1 (8 ounce) package cream cheese (at room
temperature)
2 tablespoons lemon juice
2 teaspoons lemon zest
1 teaspoon vanilla extract
4 cups confectioners' sugar
- Prepare the lemon cake according to the
directions on the box, except pour the batter
into cupcake pans, lined with paper cups.
- To make the cream frosting, beat the cream
cheese with an electric mixer until soft. Slowly
add the vanilla extract, sugar, lemon zest and
juice into the mixer and keep beating until
creamy.
- After the cupcakes have cooled, you can put
on the frosting. They have to be cool, otherwise
the tops will peel off when you try to spread
the frosting, because the warmth melts it.
- To make the cupcakes look nicer, sprinkle
yellow sprinkles on top. Yum!
Power
Fruit Smoothie
This is great with any meal or for a quick and easy
breakfast. They're cold, refreshing and a great way
to get your daily servings of fruit.
Ingredients:
1 banana
1/2 cup of raspberries, blueberries and strawberries
A cup of your favorite flavored yogurt
1/4 cup of pineapple or orange juice
1 tbsp of honey
1 tsp of vanilla extract
Ice cubes
- Peel and slice the banana.
- Put all ingredients into a blender and blend
on high speed until it looks smooth. You can add
more juice if you don't like it too thick.
- Pour the smoothie into glasses and drink up!
Fruit-sicles
These are so easy and taste so good, you won't
believe you didn't think of this before!
Ingredients:
Your favorite fruits (recommended- grapes, bananas,
strawberries, watermelons)
- Take your fruit, say grapes, and stick
little toothpicks through them.
- Place them on a small sheet of aluminum foil
and then store in your freezer for a couple
hours.
- Take them out and enjoy!
